Sweet Potato Fries with Tartare Sauce & Greens Recipe

INGREDIENTS
2 sweet potatoes, washed and cut into chip shapes

Tartare Sauce:
½ cup gherkins, finely chopped
2 tbsp capers, finely chopped
½ red onion, finely chopped
1 cup  parsley, finely chopped
1 cup vegan (egg free) mayonnaise

To Serve:
2 cups mixed salad greens
1 lemon, halved


METHOD
Preheat oven 220º and line a baking tray with non stick baking paper.

Cut two sweet potatoes into chip shapes. Place onto the lined baking tray. Sprinkle with salt. Place in oven for 25 minutes and remove when cooked through and golden brown.

For the tartare sauce
Mix all ingredients together in a bowl and place into a serving bowl.

To serve
Place some fresh salad leaves on a plate and dress with freshly squeezed lemon juice. Place the sweet potato fries onto the plate and serve with the tartare sauce.
