I just don’t have enough time my mornings are hectic… getting the kids ready, checking emails, house hold chores and then rushing to work for meetings. Plus, I’m trying to lose weight.”

I get you, when I was obese and before the heart attack, my mornings were like that too.

But after the heart attack, l discovered all the benefits of breakfast. Many studies have shown that eating breakfast improves your energy levels and ability to concentrate in the short term, and can help with better weight management, reduced risk of type 2 diabetes and heart disease in the long term. So I decided enough was enough. I was no longer going to neglect my health. I started adding healthy breakfast to my day and I lost weight, my energy went up and I felt good!

BIRCHER

This recipe makes 1 serve but I x by 4 to give me a few breakfast ready to grab and go.

Ingredients:

  • 1/2 cup rolled oats
  • 1 cup of berries
  • 1/2 cup grated apple
  • 1/2 cup of soy yogurt
  • 1/2 cup of soy milk
  • Pinch cinnamon
  • 1 Brazil nut
  • 1 Tbsp walnuts
  • 1 Tbsp ground flaxseeds

Method
Place all ingredients in a bowl and mix well. Place into four mason jars and place in the fridge overnight.
